Pero tras convertirse en una pionera de los postres veganos y sin gluten en su famosa panadería, BabyCakes, Erin decidió solventar este problema. Creó el pan más sabroso que cualquier persona celíaca o vegana pueda imaginar, y mucho más: muffins ingleses, pan de pasas y canela, tortillas de maíz, masa de hojaldre, pretzels, tortitas de cebolleta chinas, pan de sándwich... Y como no hay «pan» sin «mantequilla» que lo acompañe, también ha creado una mantequilla vegana suculenta y cremosa como ninguna otra.
